Yesterday was Ryan’s fourteenth birthday party, it was a blast. I’ll share the details in tomorrow’s post on how her vision board themed party came together. Needless to say, today I woke up dragging my feet a bit, but after a cup of coffee and breakfast I was ready to tackle meal planning for the week.
First, let’s talk about last week’s meals. Tuesday’s Skinny Coconut Shrimp hit the spot. Jeff isn’t big on coconut shrimp and even HE thought it was delicious. The shrimp was crispy and had just the right amount of coconut. The sweet and spicy dipping sauce is made with apricot preserves, rice wine vinegar and red pepper flakes. The perfect trio!
Thursday I made Ree Drummond’s Chicken Parmigiana. It’s going on my list of meals I love. From the sauce to the chicken, it was perfection.

Monday: Grilled Mediterranean Style Chicken Skewers, Corn on the Cob & Deviled Eggs
Tuesday: Chipotle Chicken Flautas & Spanish Rice
Wednesday: Fend For Yourself
Thursday: Buffalo Chicken French Bread & Salad
Friday: Stuffed Bell Peppers
Saturday & Sunday: Leftovers
Tonight’s dinner is Grilled Mediterranean Style Chicken Skewers that I purchased at Costco and corn on the cob. I’m also making deviled eggs, which doesn’t quite fit in with the meal, but I have hard boiled eggs that need to be used and my family loves them, there’ll be no complaints there.
I had also bought Chipotle Chicken Flautas and premade guacamole at Costco. We’ll have them for Tuesday’s dinner along with Ryan’s favorite Spanish rice, which happens to be by Rice-A-Roni. She loves it.
Thursday I’m making something new, Buffalo Chicken French Bread. I came across the recipe on Pinterest, the picture was totally drool worthy. I’ve had buffalo chicken pizza and buffalo chicken salad, but never French bread. From reading the recipe I’m pretty sure I’m going to love it.
I was at Rafaelle’s last week and she was making stuffed bell peppers. My mouth was literally watering, they looked so good. I’m going to make them for Friday’s dinner and extras for weekend leftovers.
